I've theorized this thing from cave bananas from evidence I've pieced together. Cave bananas are mushtrees. They grow without light, and the usual light producing genes have been turned into nutrient producing genes. It just happens that the fruiting body looks, tastes, and feels like bananas and has similar nutrient contents. I believe that it is possible to grow cave banana pods, just the survivors don't know how to do it yet.
